This was a super quick and healthy lunch I made over the weekend. I tossed fresh chilled shrimp, diced red pepper, and shredded broccoli and carrots with a little store bought spicy coconut curry sauce. I folded everything into a jalapeno tortilla with fresh cilantro and served it with a small side salad topped with the extra shrimp and vegetable mixture. It was delicious and literally took less than 10 minuets to prepare.
