Brunch Eggs Caprese

I started the weekend off right with my version of a brunch eggs caprese (plus carbs, sub swiss). This early Saturday morning breakfast was a delicious upgrade from my cereal or yogurt breakfasts all week. 

1 egg
1 whole wheat pita
1 sliced roma tomato
3 fresh basil leaves
1 slice swiss cheese
salt & pepper to taste
 This recipe is super simply and light. I fried an egg and melted swiss cheese on top. I placed the fried egg on top of a toasted wheat pita with fresh basil and sliced tomatoes. Yum-O!
